Hey guys!!! So this blog post is a continuation of my mini-series, titled ”A Lil Pumpkin Spice Makes Everything Nice,” where we dive deep into the quinntessential ingredients and recipes that are synonymous with the fall season. And so being, that I, recently, went apple-picking at Weed Orchard Family Farms in upstate New York, and picked a TON of apples....I got busy in the kitchen with concocting fun, easy, & unique, recipes to use 'em! So, up next, is my "Apple of My Eye, Galette Pie." Read on for all the juicy tea on this decadent dessert!

So ya girl's been really finding her way around the kitchen with baking! I never thought this work-a-holic would ever find the time or see the day, but I'm learning to make it really fun & feasible for me with my semi-homemade hacks. And so, upon searching for recipes, I stumbled across what appeared to be an almost deconstructed version of the traditional apple pie. It's actually what the French call a "galette" (pronounced: guh·let).
Ya see...While the traditional apple pie recipe consists of a pie crust with a crimped perimeter and a complete encasing of the content filling...A "galette" only requires that you roll out the dough pour the filling on top of the dough, concentrating more in the center and folding up the sides...And so, let's just say that this recipe had my name written ALL over it with it's super-easy-peasy, and straight-to-the-point approach, & it's little bit of French flair thrown in the mix! You're definitely gonna wanna wear stretchy pants for this one!
"Apple Of My Eye, Galette Pie" Recipe
Ingredients
-1 Qty 12" Diameter Rolled-out Dough
-1 Qty Large Egg for Egg Wash
-1 Teaspoon Milk for Egg Wash
-3 Qty Large Apples
-2 Tablespoons Brown Sugar
-1/2 Teaspoon Ground Cinnamon
-2 Tablespoons Salted Caramel Sauce
-1/2 Teaspoon Ground Cinnamon -Vanilla Ice Cream (Optional or any Ice Cream of Choice)
-Pumpkin Seed Granola (Optional)
Directions
Step 1 - Core and peel the apples, then cut into slices approximately 1/4 inch thick.
Step 2 - Toss & sauté the apples with the brown sugar, cinnamon, and salted caramel sauce on a stovetop.
Step 3 - Whisk together the egg and milk in a small bowl.
Step 5 - Preheat the oven to 400 degrees Fahrenheit.
Step 6 - Using a floured rolling pin, roll the dough out in a circle starting from the middle approximately 12 inches in diameter (I'm a semi-homemade kinda gal, so I got the Pillsbury pre-made version at the grocery & it was the perfect 12" diameter; Make sure to set the dough at room temperature (15 minutes should suffice), so that it isn't too difficult to roll out).
Step 7 - Transfer the dough to a large enough basking dish or large cookie sheet
Step 8 - Assemble the apples into the center of the dough, leaving approximately 2 inches of room around the perimeter. Be careful not to leave too much of the juices at the bottom of the pan so as to not let the pastry get too soggy. I made that mistake, but ended up liking it in the end because it was just the perfect texture for my liking. You know what I'm talking about right...?? Where it has just the right consistency and just oozes with goodness, especially once you top it off with ice cream.
Step 9 - Brush the inside of the border with the egg wash, then fold over the edges overlapping and pinching them down as necessary. Then brush the outside border of the crust with the egg wash.
Step 10 - Bake in the pre-heated oven for approximately 30 minutes, or until the edges are golden brown.
Step 11 - Wait 10 minutes to cool down; Then cut your slices & scoop vanilla ice cream (or whatever ice cream you prefer) on top with a sprinkle of pumpkin seed granola.
Guys...Guys....guys (!!!), I wish you can smell this decadence through the screen! I got just 1 word & 3 syllables for this recipe DE-LI-CIOUS!
